Avocado White Bean Toast – Food Heaven Made Easy


Avocado toast is such a flavorful and satisfying breakfast option! I have a pretty big appetite, and must say that sometimes having avocado on toast just doesn’t cut it. That’s why I whipped up this Avocado White Bean Toast. White beans add a punch of protein and fiber, and make this avocado toast a super nutritious and complete breakfast. I also threw in some pine nuts for extra crunch. The result is a meal that will have you feeling satisfied until lunch time rolls around. 

Avocados are packed with healthy monounsaturated and polyunsaturated fats, which are linked with good heart health. They contain nearly 20 vitamins, minerals, and phytonutrients! They’re hands down, one of our favorite foods. Aside from being a nutrition powerhouse, we love how flexible they are in the kitchen. You can add them to sandwiches, salads, eggs, and even smoothies. 

White beans are right up there too! Any white bean lovers in the house? I love incorporating them into recipes that call for a creamy texture, like mashed potatoes, lasagna filling, gravies, and more. Small white beans are a good source of folate and vitamin B1, as well as the minerals manganese and iron. They also come packed with protein and fiber, which makes for a satisfying and light meal. 

Let’s get started on this recipe! You’ll want to slice open your avocado, remove the pit, and scoop out that creamy goodness into a bowl. Mash it up with a fork, and add the lemon juice and a pinch of salt, to taste. Set that aside, and let’s get to our beans. Heat the olive oil, and add the turmeric and paprika. Heat over low flame for less than a minute, and add in the small white beans and pine nuts. Alternatively, you can use chopped cashews or walnuts. Sauté for 3-4 minutes, until golden brown. While that cools, spread the avocado mash onto your toast with a fork or knife. Top with the white bean pine nut sauté, and enjoy!

Serves 2

  1. 4 slices of toast
  2. 1 avocado
  3. Juice of 1/2 lemon
  4. Salt, to taste
  5. 1 tablespoon olive oil
  6. 1/2 teaspoon turmeric
  7. 1/4 teaspoon smoked paprika
  8. 1/2 cup small white beans, cooked
  9. 2 tablespoons of pine nuts
